North Star Caviar
North Star Caviar produces and sells gourmet malossol paddlefish caviar from the cold waters of the historic confluence of the Missouri and Yellowstone Rivers of North Dakota. Not tied to a commercial industry, North Dakota's brief sport paddlefishing season is closely regulated by the Game and Fish Department to assure a sustainable population. Expert biologists conduct research on location. All paddlefish received by North Star Caviar must be legally tagged by a licensed fisherman. Enthusiasts come from all 50 states and across the continents to experience this unusually large freshwater fish in its rugged and original habitat. Net proceeds benefit the region's historical, cultural, and recreational projects and fund paddlefish research.

History: North Star Caviar was established in 1993 as a joint venture of the Williston Area Chamber of Commerce and Friends of Fort Union/Fort Buford. Two years ago, the Williston Convention and Visitors Bureau purchased the Williston Area Chamber of Commerce's portion and currently manages day to day operation of the business.
